No-bake green energy balls to keep in the fridge, finished with a drizzle of melted dark chocolate. They are vegan if you use dairy-free chocolate, and gluten free if you use gluten-free oats.

Makes 16 balls. Prep 20 minutes, plus 1 hour in the fridge to set.

Ingredients

  • 200g Medjool dates (about 15 large), pitted
  • 200g raw cashews
  • 50g oats (gluten-free oats if you need them)
  • 1 tbsp coconut oil, melted
  • 2 tsp matcha powder
  • 2 sticks (20g) Transparent Greens V80
  • 2 tsp ground ginger
  • 3 tbsp dark chocolate chips

Method

  1. Soak the pitted dates in warm water for 5 minutes, then drain.
  2. Pulse the oats and cashews in a food processor until they look like coarse sand.
  3. Add the dates, coconut oil, matcha, V80 and ginger. Blend until it comes together into a sticky dough.
  4. Roll into 16 equal balls and put them on a tray lined with baking paper.
  5. Melt the chocolate chips in the microwave in short bursts, stirring in between, then drizzle over the balls.
  6. Chill for 1 hour to set.

Tips and swaps

  • No cashews? Use the same weight of almonds or oats with 2 tbsp nut butter.
  • Leave out the matcha for a milder flavour.
  • If the dough is too dry to roll, add a teaspoon of water at a time.

Good to know

Eight balls contain one full daily serving of V80. On a day you eat that many, skip your usual stick. V80 is a food supplement, not suitable for children. It contains vitamin A as retinol, so it is not recommended if you are pregnant or trying for a baby, and vitamin K and ginkgo, so check with your doctor first if you take warfarin or another blood thinner. It contains 11mg of caffeine per stick.

V80 energy balls: your questions

How long do they keep?

Up to a week in an airtight container in the fridge, or a month in the freezer.

How much V80 is in each ball?

Each ball has about 1.25g, an eighth of a stick. Eight balls add up to one stick, which is a full daily serving of V80.

Can I make them nut-free?

Swap the cashews for 150g oats and 50g sunflower seeds. V80 may contain traces of hazelnut and walnut, so it is not suitable for a strict nut-free diet.
